What's for Supper?

Mandarin Chicken Salad with Sunset Dressing
 
 
This makes a light but filling meal, especially on those days when
gardening occupies much of my time and I want something
quick but nutritious to serve my family.
 
For the salad:
 
(serves 6)
 
8 cups chopped romaine
2 cups shredded carrots
3 c finely shredded purple cabbage
1 small red onion, finely diced
2 c finely diced celery
2 c cooked, chopped chicken
2 small cans mandarin oranges
3 cups chopped tomatoes
 
This can be served either buffet style or already plated.
 
Toss with the dressing:
 
1/2 c fresh orange juice
1/2 c olive oil
1/4 c sunflower seeds, soaked overnight and drained
1/4 raw honey or maple syrup
1/2 t sea salt
pinch ceyenne or chipotle pepper (optional)
1 clove garlic (optional)
Process in blender til smooth and creamy.
 
 
*several years ago, I was very sick...
I could barely do my own work
 and rested alot.
 Thanks to God who first of all saved my soul from hell,
then brought Hallelujah Acres
and others
into my life to teach me
what I did not know
about nutrition,
 I am well and getting better
every day.
Eating  foods from the Garden certainly is my joy and delight!
