We eat alot of plant foods in our house, having greatly reduced the amounts of dairy and meat we consume. It has been a blessing and an interesting challenge for me to learn to cook this way, but after 6 years, it has become much easier and very enjoyable. Just get me to see a picture of an array of produce or walk into the produce section of a grocery store and I get all happy. :-) I love the fact that God's food has the nutrition in that helps our bodies to build those healthy cells to replace the thousands of cells in us that die daily, needing to be replaced.
Having many meatless meals can be a challenge in planning if one is accustomed to planning the meal around meat or dairy. Then, too, may be the family member or two who has a harder time enjoying meals that include beans, no matter how thankful or brave they are. It can be an interesting challenge but a fun one to try to sneak in that protein through beans and have an unsuspecting finicky eater clean up their plate with joyful abandon. "-) (yeah, I know I get my kicks and giggles in strange places! :-)
Here's what we have on the menu for tonight.
Hidden Protein Potato Soup
Saute in veg broth or olive oil:
1 red or yellow onion
4 large mushrooms
3 stalks celery
When veggies are crisp/tender, add 3 cloves pressed garlic.
Stir and saute a minute or two, then add
4 med to large carrots, peeled and diced.
Stir them into the veggies and saute a few minutes, then add
8 medium potatoes, diced
4 c chicken or veggie broth
(I learned to can my own and love it!)
1 T dried onion
1 T parsley flakes
2 t sea salt
1 t black pepper
1 T soy or tamari sauce
2 c water
Cook til all veggies are soft.
At this point, you could add diced, cooked chicken but I did the following:
Place 3 c white beans in blender along with 3 or 4 c unsweetened, original almond milk.
(and yes, dairy milk can also be used in place of the almond milk)
Blend til smooth and add to the hot soup.
Heat all through and serve.
We are having our soup with freshly baked spelt bread, thanks to my
oldest daugther, Angela! The children have been casting pleading glances
at it off and on since it's appearance from the oven. Somehow 1 slice just
whetted their appetites for more!
We are also having orange slices and raw veggies and hummus.
We will eat with thanksgiving and be satisfied.
What a blessing to have good food to eat that will bless the
good health God has given us!

Yes, eating this way has been a journey for us but one that has had some good rewards. I enjoy discovering how to make the change and we all feel better, too.
